Favorite Summer Breakfast

My favorite summer breakfast is this smoothie:

Spiced Blueberry Smoothie

In a high-speed blender combine:

  • 1/4 rolled oats

  • 1 small handful of almonds (10-12 almonds)

  • 1 Tbsp of ground flax

  • 1 tsp of ground cinnamon

  • 1 tsp of ground ginger

  • 1/4 tsp of ground cardamom

  • 1/4 tsp of ground nutmeg

Pulse a few times to chop up the almonds and the oats. Then add:

  • 3/4 - 1 cup of soy milk (more or less depending on how thick you like it. I like to eat mine with a spoon :)

  • a handful of spinach (roughly 1 cup)

  • 1 cup of frozen blueberries

  • 1-2 tsp of dried cranberries (I like the chew)

Blend until desired consistency (i.e. no big spinach leaves or whole blueberries whirling around).
